Vegan Heaven

 

Ingredients:

2 medium sized Sweet Potatoes,
Sprinkle of Sesame Seeds,
Half a fresh Pomegranate,
Half a Sweet Red Pepper,
Half a head of Broccoli,
100g Green Lentils,
6 Cherry Tomatoes,
100g Kale.

Please note: All ingredients is organic and where possible, sourced locally.

Instructions:

Preheat over to 200 degrees,
Wash and then cut Sweet Potatoes into chips,
Coat Kale and Sweet Potatoes in cold pressed extra virgin Olive Oil,
Then season with Himalayan rock salt,
Place Kale and Sweet Potatoes into the oven,
Bake for 20 minutes making sure you turn Kale and Sweet Potato chips regularly,
Cook until both are crisp,
Whilst the Kale and Sweet Potato are cooking,
Cut Broccoli into manageable pieces and steam,
Using a saucepan and cook Green Organic Lentils,
Cut Pomegranate into half, extract amount as required,
Once all ingredients is cooked to your personal taste,
Plate up and then sprinkle on few Sesame Seeds as a finishing touch.
