Salmon Coconut Rice

 

Ingredients:

1 1/2 Mugs organic Brown Rice,
2 Mugs of water,
1 Chopped organic Red Onion,
2 Tablespoons of extra virgin Olive Oil,
4 Small pieces Atlantic Salmon,
1 Chopped organic Red Pepper,
3 Tablespoons gluten free Korma curry paste,
1 Mug frozen Peas,
400ml Tin Coconut Milk.

Instructions:

Put Rice, Coconut Milk and Water in a saucepan,
bring to the boil and then simmer,
Set to one side when ready,
Heat 1 tablespoon of the oil in large frying pan,
Add Salmon,
Season well,
Fry on medium heat for 2 minutes on each side,
Set to one side when done,
Add tablespoon of oil to the pan,
Fry Onions and Peppers until Onions soften,
Add curry paste and fry for 30 seconds,
Add rice and frozen Peas to the pan,
Flake the fish and add to the pan,
Mix gently and then serve.
